  • 1 cup whole wheat or regular penne pasta
  • 120–150g lean minced beef
  • 1–2 fresh tomatoes, finely chopped
  • Salt & pepper to taste
  • A pinch of cinnamon (optional)
  • Light grated cheese (e.g., mozzarella, cheddar or kefalotyri)
  • 1 tbsp milk (optional, for extra creaminess)
 
 
Process:
  • Boil the pasta according to package instructions until al dente. Drain and set aside.
  • While the pasta is cooking, heat a non-stick pan and cook the minced beef with chopped tomatoes, salt, pepper, and cinnamon (if using). Cook until the beef is browned and the tomatoes have broken down into a sauce.
  • While the pasta is still hot, add light grated cheese and 1 tbsp of milk (optional) and stir until the cheese melts into a creamy texture.
  • Serve the pasta on a plate, and top with the cooked minced beef and tomato mixture.
  • Optional: Add a touch more cheese or fresh herbs for garnish.​
