2 chicken thighs or breasts (depending on preference)

1 large sweet potato, peeled and chopped into small cubes

Juice of 1 orange

Juice of ½ lemon

1 tsp paprika

½ tsp cumin
-
A pinch of cinnamon (optional)

Salt & pepper to taste

1 tbsp olive oil (optional)
Process:

Preheat the oven to 200°C.

Wash and chop the sweet potato into small bite-sized cubes.

In a bowl, mix the orange juice, lemon juice, olive oil (if using), and spices: paprika, cumin, cinnamon, salt, and pepper.

Place the chicken and sweet potatoes into a baking dish.

Pour the citrus-spice mixture over the chicken and potatoes, tossing gently to coat everything evenly.

Bake in the oven for about 40–45 minutes, or until the chicken is fully cooked and the sweet potatoes are soft and golden.
