  • 2 chicken thighs or breasts (depending on preference)
  • 1 large sweet potato, peeled and chopped into small cubes
  • Juice of 1 orange
  • Juice of ½ lemon
  • 1 tsp paprika
  • ½ tsp cumin
  • A pinch of cinnamon (optional)
  • Salt & pepper to taste
  • 1 tbsp olive oil (optional)
 
 
Process:
  • Preheat the oven to 200°C.
  • Wash and chop the sweet potato into small bite-sized cubes.
  • In a bowl, mix the orange juice, lemon juice, olive oil (if using), and spices: paprika, cumin, cinnamon, salt, and pepper.
  • Place the chicken and sweet potatoes into a baking dish.
  • Pour the citrus-spice mixture over the chicken and potatoes, tossing gently to coat everything evenly.
  • Bake in the oven for about 40–45 minutes, or until the chicken is fully cooked and the sweet potatoes are soft and golden.
  • Serve warm and enjoy!
